Extremely fine micro-crystals make this icing sugar the ideal basis for a velvety texture. It is available as pure, ultrafine icing sugar and as coated icing sugar in a choice of white, pink, orange or yellow. Coated icing sugar is suitable for dusting doughnuts and other still warm, fatty pastries – it is moisture-resistant and has good freeze/thaw stability.
