Rusk is a breadcrumb-like product with a light, freshly baked aroma and the typical flavour of baked cereals products. It is produced from wheat flour and salt using a special baking method that does not involve yeast. It binds around three parts of water, has a light, fluffy consistency, does not form lumps, does not soften, remains almost dry on the end product and reduces cook loss. Rusk is used instead of breadcrumbs, particularly in minced meat and formed products – to increase quality and reduce costs.
