Even if it does not contain meat, milk or egg, it should nevertheless have shape, a perfect texture and a thoroughly satisfying flavour. The demands put on food producers that wish to manufacture high-quality vegan products are stringent. Added to that is the fact that ingredients that were long regarded as the plant-based alternatives of choice, are nowadays controversial from an environmental perspective or because they contain allergens. Yet there are natural functional ingredients that are grown in Europe and that enable vegan products to be enhanced in keeping with the age we live in. Be it in terms of their water- and fat-binding capabilities, bite, emulsification, stabilisation or flavour.
